WHAT IS EGG COFFEE? – HOW TO ENJOY IT THE RIGHT WAY?

For residents of Hanoi, egg coffee is no longer an unfamiliar treat. Initially, many might find the concept of this type of coffee somewhat unusual, thinking it might taste fishy. But once accustomed and knowing how to properly enjoy it, one can fully appreciate the creamy sweetness of egg coffee.

WHAT IS EGG COFFEE

Egg coffee, a unique concoction, is widely available across cafes throughout Vietnam, especially in Hanoi. This beverage has been a regular feature on cafe menus since the 1950s. Created by Mr. Giang during a time when milk was a rare commodity in Vietnam, this drink substitutes milk with egg yolks. This innovative pairing results in a fascinating and harmonious blend that often astonishes international visitors & becomes an unofficial symbol of Viet Nam Coffee.

HOW TO ENJOY EGG COFFEE

Everyone has their preferred way of enjoying this drink, but the best method for a delightful experience is to gently tilt the cup, and sip slowly, allowing the coffee to flow with a bit of the egg cream. The creamy sweetness of the egg gently balances the bitterness of the black coffee, leaving a rich, fragrant aftertaste. Some prefer to stir the egg cream and coffee together until smooth, offering a sweetness that permeates each drop, suitable for those who might not enjoy strong coffee.

Egg coffee has seemingly become an unofficial symbol of Hanoi coffee culture. The locals enjoy a warm cup of egg coffee, savouring the blend of the coffee’s bitterness with the fluffiness of the whipped eggs.

HOW TO MAKE AUTHENTIC GIANG STYLE EGG COFFEE

Egg coffee was invented as an alternative to the expensive ingredients of a cappuccino back in the 1940s when fresh milk was costly. People whipped egg yolks as a substitute for milk foam in cappuccinos. However, it’s not merely a Vietnamese version of a cappuccino but rather a unique and creative drink in its own right.

Here’s how you can make egg coffee:

Step 1: Brew filter coffee. Choose pure, unblended coffee types to ensure both health and flavour.

Step 2: Whisk egg yolks with honey, milk, or sugar until fluffy. Continue beating until the mixture is cooked, releasing a pleasantly sweet and creamy aroma. Choose fresh eggs to minimize any fishy taste.

Step 3: Pour the coffee into a cup, carefully topping it with the fluffy egg cream. The coffee should always be served in a hot water bath to maintain its temperature. Some suggest this method also helps to diminish any unpleasant smells from the eggs.

Additionally, a hot water bath helps keep the coffee warm, preventing it from cooling down too quickly. If you are confident in your recipe or have another method to keep it warm, you might opt to replace the water bath.
